Description
A roast leg of pork has oodles of crackling and gives nice lean, uniformly shaped slices and can be stuffed prior to tying into shape.
Hot tips:
Allow the meat to come to room temperature before you cook it.
For good crackling: make sure the skin is very dry before you cook it.
Cooking:
Preheat the oven to 240C/gas 9.
Roast the pork at this temperature for 20 minutes, and then reduce the heat to 180°C / gas 4 for the remainder of the cooking time, (between 20 and 30 minutes per 450g).
